Boost raises cylinder pressure — and knock risk
A turbocharger forces more air into the cylinders, raising pressure and temperature. Higher pressure makes the fuel more likely to knock (pre-ignite), so many turbo engines are designed around higher-octane fuel to stay safe and hit their rated power. That's why a lot of turbos list premium as required or strongly recommended.
What running regular does in a turbo
Most modern turbos will protect themselves on regular by pulling timing and reducing boost — so they don't immediately break, but you lose power and efficiency, and under hard load (towing, hills, hot days) sustained knock is harder on the engine. If your manual says premium is required, treat it as required.

Making a turbo last

None of this is exotic — it's just respecting that a turbo runs hotter and harder than a comparable non-turbo.
